We serve it the way the house always has: in three courses, broth first and the platter of meats at the end. It costs 21,00 euros per person and it is worth ordering when you book, because we make a limited amount and it runs out.

How we make it
The stew starts the day before, with the chickpeas soaking. The next morning the pot goes on early and does not stop. It is served in three courses, in this order.
- The broth
- The stock from the pot, strained and served with fine noodles. It comes out piping hot, in a deep bowl, before anything else. It is drawn from the same pot where the chickpeas and the meats have spent hours, which is why it tastes the way it does.
- The chickpeas and vegetables
- Tender pedrosillano chickpeas, cabbage sauteed with garlic and potato boiled in the broth itself. With a drizzle of olive oil and, if you like, a little cumin or some of the house tomato sauce.
- The meats
- The platter: beef shin, hen, pork belly, marrow bone, chorizo and black pudding. It comes to the middle of the table to share, with pickled peppers and whatever broth is left.
