How we make it
- Seared and browned
- Oxtail cut at the joint, seared in the casserole in properly hot oil.
- Slowly stewed
- Onion, carrot, leek, garlic, bay leaf and red wine. A good three hours over a low flame, no rushing.
- The sauce reduced
- The sauce is passed through a sieve and reduced until it coats. Served with potato and bread for mopping up.

Do I need to book to eat oxtail?
We recommend booking a table, especially from Thursday to Sunday. The oxtail is stewed in batches and on busy days it can run out: tell us when you book and we will keep it for you.
Which days do you have oxtail?

Is it served off the bone?
We stew it on the bone, which is where the flavour is, and it arrives so tender that the meat comes away with a fork.
