Made to order, in the pan
Paella and rice dishes in central Madrid
No reheated rice: every paella is started when you order it and takes around 30 minutes. All of them for two people, except the arroz a banda.
How we make it
The rice does not sit in the kitchen waiting for someone to order it. It starts with your order and reaches the table freshly made, with its socarrat.
- Sofrito and our own stock
- The stock is made in house. The sofrito is started in the pan itself, over a high flame.
- Rice at the right point
- The rice goes in and is spread out. From then on it is not touched: no stirring.
- Socarrat and resting
- The last few minutes over a fierce flame for the socarrat, and a short rest before serving.

How long does a paella take?
Around 30 minutes from when you order it, because that is when we start it. If you are in a hurry, tell us when you book and we will have it under way.
Are the paellas for two people?
Yes, all of them except the arroz a banda, which is served as a single portion.
